Loose Leaf Recipes

Lemon Bars

1 CUP BUTTER (2 sticks)
2 CUPS FLOUR
1 CUP SUGAR
½ TEASPOON BAKING SODA
10-12 OZ. JAR LEMON CURD*
2/3 CUP COCONUT FLAKES
½ CUP CHOPPED** (TOASTED) ALMONDS

1. Cream butter
2. Add flour, sugar, and baking soda
3. Beat until lumpy
4. Pat 2/3 of the mixture into bottom of 9X13” baking pan
5. Bake at 375⁰ for 10 minutes
6. Remove, cool slightly
7. Lower oven to 350⁰
8. With spatula, spread lemon curd over baked layer
9. To remaining 1/3 of crumb mixture, add coconut and almonds
10. Spread on top of lemon curd
11. Bake at 350⁰ for another 25 minutes or until light browned

Cool completely before you cut into squares***
*Trader Joes is the best lemon curd that I have found – cheapest too
**I use sliced almonds and I don’t toast them
***Sprinkle with powdered sugar before you cut into squares if you like things a little sweeter
